Tandoori Cod Loin with Tomato Salad and Mint Raita

Cod loin marinated in authentic Tandoori spices is simply delicious. Served with a fresh cherry tomato, onion and coriander salad, with zingy mint raita drizzled over the top – perfect for a warm Summer’s day. This Tandoori Cod Loin with Tomato Salad and Mint Raita recipe serves two and takes just 20 minutes cooking time.

Tandoori Cod Loin with Tomato Salad and Mint Raita – what you need:

1x large cod loin/fillet approx. 500g in weight – 250g per portion.

Approx. 10g of The Food Beaver Tandoori Seasoning – roughly 5g per person/serving or add to your own preference.

2x tablespoons plain natural yoghurt.

Drizzle of groundnut oil or olive oil.

Fresh red chilli (optional for the garnish) – finely chopped.

For the Tomato Salad:

Handful of cherry tomatoes – approx 150g – sliced in half.

1x small white onion – finely chopped.

Handful fresh coriander – finely chopped.

Juice of 1/4 lemon.

For the Mint Raita:

4x tablespoons plain natural yoghurt.

Handful finely chopped fresh mint or 1x tea spoon mint sauce.

Juice of 1/4 lemon.

Tandoori Cod Loin with Tomato Salad and Mint Raita – what you need to do:

1. Firstly, coat the cod loin in The Food Beaver Tandoori Seasoning then add a drizzle of oil and rub in. Cover and leave to marinate for any time up to 24 hours if the fish is fresh.

2. Once ready to cook, add the plain yoghurt to the marinated cod and rub in. Cook on high heat for approx. 10 minutes (BBQ, oven or grill). If using the oven, cook at 220°C/200°C fan. Cook for 10-15 minutes, depending on the thickness of your fish. If using a BBQ turn once and use a fish grilling utensil as the cod will flake and break up when turning. Reduce cooking time if necessary.

3. Whilst the cod is cooking, add the ingredients for the tomato salad into a bowl and mix thoroughly – save a small amount of coriander for the garnish at the end. Then add the ingredients for the mint raita into a bowl and mix.

4. Once the cod is cooked, serve with a generous helping of the tomato salad with the mint raita drizzled over the top. Garnish with more chopped coriander, fresh red chilli and lemon wedges.
