Alas! The Summer weather has returned so let’s hope it lasts! If you’re planning a BBQ this weekend and in need of some inspiration outside of the usual BBQ essentials, this spiced BBQ lamb burger with halloumi and homemade tzatziki recipe is guaranteed to get your tastebuds going…and leave everyone going “mmmmmm!”.
Making a spiced BBQ lamb burger is also really easy and should take just 10 minutes preparation and approx. 5 minutes cooking time on the BBQ, depending on how thick you like your burgers!
This recipe makes 4x single lamb burgers or 2x double lamb burgers if you’re feeling hungry!
Spiced BBQ Lamb Burger with Halloumi and Homemade Tzatziki – what you need:
For the lamb burgers:
1x lb or approx. 500g minced lamb. I have used minced shoulder of lamb as this has a good amount of fat content to keep the burger juicy and tender. You can use lean mince if you prefer – just ask your butcher.
2x teaspoons ground cumin.
2x teaspoons smoked paprika.
2x cloves garlic – crushed.
4x sprigs of mint – stalks removed and leaves finely chopped.
1/2 teaspoon each of sea salt and black pepper.
Drizzle olive oil.
For the Homemade Tzatziki:
6x tablespoons plain natural greek yoghurt.
1x clove garlic – crushed.
2x inches cucumber – grated and strained to remove excess water.
1/4 of a fresh lemon juice.
Drizzle of extra virgin olive oil.
Pinch of sea salt.
Lamb Burger Extras:
250g or approx. 1/2 lb Halloumi cheese – sliced into 4 or 8 pieces depending on how many burgers you are making. 2 slices of cheese per burger should be plenty but I’ll leave that up to you!
1x red onion – sliced into rings.
2x vine tomatoes or 1x large beef tomato – sliced into discs.
Lettuce of your choice – washed and drained.
Burger buns of your choice – here I have used a very light oven bottom muffin but others that work just as well are brioche, sesame buns or even flatbreads.
Spiced BBQ Lamb Burger with Halloumi and Homemade Tzatziki – what you need to do:
1. Firstly mix all the lamb burger ingredients into a bowl and then divide the lamb burger mixture into 4x equal sized balls. Roughly flatten the balls into your preferred thickness using your hands to create the burgers. Cook the burgers on the BBQ for 2-3 minutes each side, depending on how thick your burgers are.
2. Whilst the burgers are cooking, add the tzatziki ingredients to a bowl and mix.
3. Remove the burgers from the BBQ to rest and then cook the halloumi on each side until BBQ char lines appear and the cheese has softened. Lightly toast your burgers buns on the hot surface.
4. Build your burger exactly the way you like it and be prepared to get messy!
