Homemade Sausage Rolls

Homemade sausage rolls in my opinion are one of the best comfort food snacks, so quick and easy to make and perfect for sharing with friends and family.

This homemade sausage rolls recipe is so simple and works well as a base for any additional ingredients you want to add to create different flavours and variations.

Here I have cooked classic sage and onion sausage rolls as well as some slightly different smoked paprika and cumin ones to pack a bit more punch!

This homemade sausage rolls recipe takes just 10 minutes to prepare and approx. 20-25 minutes cooking time, depending on how big you like to cut the sausage rolls. I like bitesize pieces as they are perfect for snacks and party food.  This recipe will make approximately 20 bitesize sausage rolls as in the picture.

I will also be using ready made, ready rolled, shop-bought puff pastry as it just makes everything so much easier and the end result is fantastic.

Sage and Onion Homemade Sausage Rolls – what you need:

Approx. 450g or 1lb good quality sausage meat.

Approx. 375g or 13oz ready made, ready rolled puff pastry.

1x medium sized white onion – finely chopped.

4x tea spoons dried sage (you can of course use fresh if you have it).

1/2 tea spoon ground black pepper.

1/2 tea spoon ground sea salt.

1x beaten egg – for the glaze.

Smoked Paprika and Cumin Homemade Sausage Rolls – what you need:

Approx. 450g or 1lb good quality sausage meat.

Approx. 375g or 13oz ready made, ready rolled puff pastry.

1x medium sized white onion – finely chopped.

2x tea spoons smoked paprika.

1x tea spoon ground cumin.

1/2 tea spoon ground black pepper.

1/2 tea spoon ground sea salt.

1x beaten egg – for the glaze.

Homemade Sausage Rolls – what you need to do:

1. Firstly preheat the oven to 220°C/200°C fan. Thoroughly mix all the ingredients for your homemade sausage rolls recipe together in a large bowl. To test the flavour – take a small amount of the mixture and roll into a burger shape and cook in a frying pan with a little oil. Once cooked through, taste and add seasoning/sage/spices if needed.

2. Unroll the ready made puff pastry onto a large chopping board or kitchen surface with the longest side running horizontally (left to right). Cut the pastry horizontally along the middle into two equal sized lengths. Now fill each piece of pastry with the mixture running along the centre, allowing enough pastry each side to fully overlap and encase the mixture.

3. To roll the sausage rolls. Fold one side of the pastry onto the top of the mixture and brush some beaten egg along the entire top surface of the pastry you have just folded over. Now roll the entire sausage roll over onto the remaining pastry and gently apply some pressure to seal the pastry join. Brush the top of the sausage roll with beaten egg.

4. Cut the sausage roll into approx. 2.5cm or 1 inch pieces and place onto the baking tray – make sure the pastry join remains underneath. Bake in the oven at 220°C/200°C fan for around 20-25 minutes and then check them. Once they are golden brown all over, they are ready to come out. Allow to cool before diving in!
